Black Bean Burger (Vegan/Veggie)

Ingredients:

1 tin of black beans

½ red onion

1 green pepper

½ tsp cumin

½ tsp chilli flakes

1 tsp smoked paprika

1 tbsp chia seeds soaked in water (vegan) or 1 egg

2 headed tbsp of porridge oats

1 tsp salt

2 cloves of garlic

1 lime

Bunch of coriander

Method:

  1. In your food processor, add your drained black beans, pepper, garlic, coriander and onion. Slowly ass in your porridge oats, this might seem like a strange ingredient, but they act like breadcrumbs and bring the mix together. Blend until smooth and combined.

  2. Add in the cumin, chilli flakes, paprika, salt and lime juice.

  3. Add your beaten egg or chia seed mix. Pulse the food processor until the mixture just binds together.

  4. Divide and shape into burger patties

  5. Place on an oven tray and bake for 25 mins.

  6. Once the burger patties are made, construct your burger your way!



Sweetcorn Fritters

Ingredients:

1 can of sweetcorn or creamed corn

3 spring onions

1 red bell pepper

1 red chilli

1 tsp paprika

Bunch of coriander

Grated cheddar cheese to taste (optional)

1 tsp honey

Pinch of cumin

1 heaped tbsp plain flour

1 egg

Splash of milk, if needed


Method:

  1. Add your drained can of sweetcorn into a mixing bowl, along with the diced bell pepper. Try and chop the bell pepper as small as you can, a similar size to the sweetcorn.

  2. Chop your chillies, spring onion and coriander. Add to the mixing bowl.

  3. Now add your spices; paprika, cumin and salt.

  4. Grate in your prefered amount of cheese, you can use any cheese you have in this recipe.

  5. Crack in your egg and mix.

  6. Now sift in your flour a little at a time. You’re trying to create a lose batter that holds the ingredients together.

  7. Once you’re happy with your mix, get a frying pan heating on the hob on a medium heat.

  8. Scoop ladles of the mixture into the frying pan, cook for 3 mins on each side.

  9. Enjoy as a breakfast with aggs and avocado, or maybe with smoked salmon...or just on their own!




Gazpacho (Vegan)

Ingredients:

6 large ripe tomatoes

1 pepper (your choice of colour)

½ cucumber - peeled and deseeded

½ red onion

2 cloves of garlic

Bunch of basil and parsley

1 avocado (alternatively you can use the traditional option of stale white bread)

50ml sherry vinegar or white wine vinegar

Red chilli (optional)

½ tsp cumin

Salt & pepper

2 tsp sugar

Olive oil

Optional extras:

Courgette

Celery

Watermelon or strawberries


Method:

  1. Prep your tomato by covering them in hot water for a few minutes, then remove their skin.

  2. Chop the tomatoes and add them to your food processor, along with all the remaining ingredients.

  3. Blend! It’s as simple as that.

  4. Season to your taste and add olive oil to get the soup consistency you like.

  5. Serve with diced cucumber and basil leaves.
